Greg Todd started in the Cajun restaurant business in 1989. He worked as a prep cook and assistant manager under the direction of New Orleans native Joe Vuskovich for several years. Then in the mid 1990’s he partnered with Joe V. to open Yats Cajun Creole in downtown Lexington. This venue was in operation approximately five years before closing shop. In 2004 Greg ventured out alone to open Gumbo Ya Ya. Greg wanted to open a fast casual Cajun joint with no frills and a “keep it simple” motto. Thus the chalkboard menu and tax included pricing. The first location on South Broadway opened with a bang so Greg and his wife Tressa decided to open a second location in the Tates Creek Centre in 2005. Greg takes great pride in knowing every plate of food served in his stores are prepared by him using fresh local produce (no preservatives) and that he is dishing up damn good authentic Cajun Creole for a can’t beat it price!
